Grab and Go Boxes

The Farm to Family market near me has developed a ‘Grab and Go’ box.  It’s kind of like a CSA box except you don’t have to sign up.  The pros:  it’s perfect for those of us who don’t need enough produce to justify a CSA membership, or even half of one; you’re in and out of the market in less than 10 minutes.  The cons:  it’s a potluck of vegetables and you might not recognize them all; like a CSA weekly box it’s a lot of produce for one person to get through in a few days.

Here’s what I have to work with:  kale, spinach, cabbage, lettuce, Spring onions, potatoes, apples, mushrooms and some kind of dark, leafy green that comes in the same kind of gathered stalk format as celery.  Any ideas on that?

Tonight I had tacos for dinner so I used a little lettuce, but that’s it.  I’ll start on the plan for the box tomorrow.  I also have leeks, romaine lettuce, a red pepper, carrots, celery and a sweet onion.  Anyone got a recipe idea?  Send it on!
