Emptying the Fridge

That’s not a real plan for this week.  My work schedule this week is preventing me from spending much time in the kitchen.  And of course tonight will be filled with Super Bowl food.  So, the only thing to do is try to use up the stuff I have in the fridge.  Here’s what I got.  Milk, eggs, collards, turnips, plain greek yogurt, parsley, matchstick carrots, baby arugula, a red pepper and the magical goat cheese from a few days ago.  Of course there’s a ton of stuff in the pantry and freezer to supplement.  Stay tuned to see how I turn this stuff into dinner tomorrow night!   If you’ve got a suggestion, send it on!

    This why I love February. Well, one reason. It’s such a good reason to go through all the ‘stuff’ in the fridge and give ourselves the opportunity to start fresh with the spring.
