The Plan for the Week – Lentils

The planning ahead last week worked out pretty well.  I had plenty of chicken for my soups and plenty stored safely in the freezer for future soups and casseroles.  This week I’m trying something fairly new for me.  I almost never make anything with lentils.  Lentils are high in protein and iron as well as inexpensive and versatile.  Time to check them out.  I’ve done some recipe research and I’ve placed my order with Relay Foods.  I’ll pick it up tomorrow and be ready to roll.

In the meantime I have the makings for my favorite lentil soup from Jane Brody’s Good Food Book so look for that later tonight.  And here’s a list of the recipes I’m considering for this week.  Enjoy!
