Sausage Stuffed Sweet Banana Peppers

It’s a stuffed peppers kind of day.  I actually made these last night, but by the time I got everything done I had already eaten the yummy vegetable plate.  They made a yummy lunch and the rest are in the freezer for another day.  I’ve been a tad overrun with sweet banana peppers and this is a great way to use them.

Of course the highlight of these peppers is the hot italian sausage.  Kudos yet again to Faith Farm for the best italian sausage ever.  I used the hot for these, but the sweet italian sausage works too.  I started with a pound and a third of bulk sausage (no casings) and six good sized banana peppers.  Use one-third of the sausage to stuff the peppers; one-third in the sauce; and save the last third for pizza or something else.  The sauce is a pretty standard tomato sauce with sausage added.  Easy.  Serve them with a bunch of vegetables and/or a salad.  It’s a darn good dinner. Always make enough to freeze some for another day.

Sausage Stuffed Sweet Banana Peppers

Ingredients

1 lb hot italian sausage, divided in half
6 fairly large sweet banana peppers
1 small onion, diced
1 quart whole peeled tomatoes
2 cloves garlic, minced
3 T chopped fresh oregano
3 T chopped fresh basil

Directions

Brown half of the sausage in a large, heavy skillet. Remove from the pan and set aside. Clean most of the grease from the pan. Heat the remaining grease and stir in onions and garlic. Saute 2-3 minutes. Add the tomatoes with their liquid. Simmer uncovered for 30 minutes. Add the browned sausage. Heat another 5-10 minutes.
While the sauce is simmering slice each pepper longways. Remove the stems, seeds and veins. Stuff each pepper half with some of the raw sausage. Put peppers, sausage side up, in a baking dish. Spoon on enough sauce to cover the peppers. Bake for 30-35 minutes at 350.
If you’re freezing some of the peppers freeze them stuffed with sausage, but without the sauce. Freeze the sauce separately. Thaw both before baking.
