Flank Steak Tacos with Mango and Avocado

This is night two of recycling the Sweet and Spicy London Broil into something different.  If you’re following along then you know that last night’s Asian theme was a flop.  I decided on something much safer tonight.  It’s hard to go wrong with a taco.  And there’s nothing at all wrong with these.

The flavors and textures in these tacos were outstanding.  Warm, spicy steak; creamy avocado; sweet mango; crunchy cabbage; bright lime juice.  The only thing I might add next time would be a tiny touch of sour cream.  And talk about easy.  I bought the cabbage already shredded; the steak was already done – just a quick reheat; I chopped the mango over the weekend.  I just had to dice the avocado and heat the tortillas.  Done.

I served these with the leftover sugar snaps and squash and onions from Saturday.  A little unorthodox as taco sides, but I didn’t want them to go to waste.  Honestly the sweet sugar snaps were a nice complement and squash and onions are always good.

No recipe tonight.  Just a really good dinner.

Good? Very.
Easy? Very.
Good for company? Not really. It’s more of a family thing.
Special shopping? A ripe mango really makes these special.
